Stir-fried tomato and eggs
This is a classic and very easy to make Chinese dish, it is proven to be delicious.
Don't be over concerned, it is very easy to do, and the whole process only take you 5 minutes.

Ingredients,
-- salt, 1 teaspoons
-- sugar, half teaspoon
-- depending on how hungry you are, or how many people. To start (as a trial), I would recommend to have 2 eggs. Beat the eggs, not too much, just well mix the yolk and the white (put in half of teaspoon of salt and mix well)
-- vege oil, 3 tablespoons
-- if you are going to do 2 eggs, then have 3 medium size tomato, each cut into 6 wedges
-- green onion, 1 piece, finely chopped
Cooking,
-- First, heat the pan (non-sticky if possible), until very hot (start to see hint of smoke), then turn the heat down to medium
-- Put in 2 tablespoons of oil in the pan, and tilt the pan to let oil distribute evenly at the bottom of the pan
-- Pour the egg liquid into the pan, evenly over the heated surface, not too thin (if it is too thin, it will have a drier taste)
-- With the heat of the pan, the egg will be turned fairly quickly. While the egg is still flowing at the top of the layer (around 20 seconds), move the pan away from the heater, use turner to sum the egg layer together, and put them in a dish.
-- Put the pan back to the heater, add the rest of the oil. Put in tomato wedges, add in rest of the salt and sugar, stir the tomato. Cover the pan, for 3 minutes. The heat is still at medium level.
-- Open the cover, and you should see the tomato produces some juices, and the tomato is soft. Now, add in the cooked egg, break them into the shape you like, and mix well with the tomato and its juice.
-- Serve with green onion.
Some notes
-- Don't over cook the eggs!!!

Basically, eggs can be stirred with a lot of things(imagination, please), some example,

Another way to try, is to cap stir fried tomato with eggs on top of rice. The rich taste of tomato and egg juice penetrates into the rice, will certainly surprise you.
